{Recipe} Cocoa Cayenne Dusted Kale Chips

Cocoa Cayenne Kale Chips

Hopefully you rescued all of those leafy greens last weekend from dying in the heat wave!  If you like crispy salty snacks and you’ve never tried kale chips, you need to go make these. Now!

Cocoa Cayenne Kale Chips

Number one, it’s easy.  Number two, they’re delicious. Number three, I’m willing to bet you could eat an entire head of kale in one sitting if they’re in chip form.  Simply massage the leaves in a little olive oil, season, and bake at 275 F for 20 minutes and you’ve got yourself an awesome afternoon snack.

Cocoa Cayenne Kale Chips

This recipe uses cocoa & cayenne for the seasoning but you could switch it up depending on what you like.  Experiment with things like parmesan cheese, salt, pepper, smoked paprika, garlic powder, herbs, or nutritional yeast.

COCOA CAYENNE DUSTED KALE CHIPS

Ingredients:

  • 1 head curly kale (washed & dried thoroughly)
  • 1-2 tablespoon olive oil
  • cocoa powder
  • cayenne pepper powder
  • salt
  • coconut sugar (or regular sugar)

Directions:

  • Preheat oven to 275 F.
  • Remove the ribs from the kale and cut or rip into small pieces.
  • Toss Kale in olive oil and massage with your hands until all of the leaves are lightly coated.
  • Spread leaves in a single layer on a baking sheet. Season well with salt, cocoa powder, coconut sugar & a LITTLE cayenne. A little goes a long way so go light with it or you’ll blow your head off.
  • Bake for 20-25 minutes or until light & crispy.

 

 

{Recipes} Strawberries Galore!

I hope you picked up some of those amazing strawberries at the Farmer’s Market last weekend.  If you somehow find it possible to not eat the entire pint in one sitting, you might want to try one of these awesome recipes.

This salad was shared by our committee member Marge, she said its one of her favorites and it looks devine!

STRAWBERRIES & FRESH MOZZARELLA WITH MINT PESTO DRIZZLE:
Recipe from June 2011 Issue of Family Circle

1 pound strawberries, sliced
2 tablespoons sugar
1 cup extra-virgin olive oil
1 cup mint leaves, loosely packed plus more for garnish
1/4 cup almonds, sliced
1/4 cup parmesan cheese
1 clove garlic
1 pound fresh mozzarella cheese, 1/2 inch slices
1 tablespoon balsamic vinegar

1. Combine strawberries and sugar in a large bowl.  Cover & set aside

2. In a food processor, combine olive oil, mint leaves, almonds, parmesan & garlic

3. Layer mozzarella on a plate.  Spoon strawberries, mint pesto and balsamic vinegar over top.  Garnish with mint leaves.

This second recipe is great when you’re in the mood for some ice cream but you’d like something healthier.  Just freeze those strawberries and a few bananas and you have a creamy delicious soft serve “ice cream.”

HEALTHY STRAWBERRY CHEESECAKE “ICE CREAM”

1 Frozen Banana
1/3 cup frozen strawberries
3 tablespoons greek yogurt
1/2 teaspoon vanilla extract
graham cracker pieces

Combine the banana, strawberries, yogurt and vanilla in a food processor until smooth & creamy.  Top with graham cracker pieces and enjoy.

Farmers’ Market set to open June 9th.

Everything is green, lush, and blooming extravagantly here on the North Shore with the perfect balance of warmth, sun and rain.  That means it’s almost time for the Swampscott Farmers’ Market to launch its 2013 season. The market, which will be held again at the Swampscott High School at 200 Essex Street, officially opens on June 9 and will run every Sunday, 10 a.m. to 1 p.m., rain or shine, through the last Sunday in October.

What you can expect in early June.
One of the beauties of purchasing food from the Farmer’s Market is the freshness and truly seasonal nature of the produce.  On opening day, shoppers can expect to find an array of spring vegetables harvested within 24 hours of the market and in many cases, early that morning.  Likely produce will include greens such as lettuces, spinach, chard, kale, asparagus and broccoli raab, young beets, carrots, radishes and baby potatoes, snap and snow peas, green onions, chives, garlic scapes and other herbs.  Rhubarb will be in abundance, and strawberries will be coming along soon.

But produce isn’t the only thing you’ll find at the Swampscott Farmer’s Market.  Market vendors will offer a wide range of other goods including exceptionally tasty pasture-raised meats and eggs, fresh seafood, breads and pastries, soups and chowders, fresh homemade pastas and other prepared foods, as well as a variety of crafts such as jewelry and soaps made by local artisans. Special activities for children and families are planned for opening day, including live music, face painting and “plant-a-seed” hosted by Brick Ends Farm Compost.

Shopping at the farmers market strengthens our community, supports local farms and business, and helps us to get in touch—with friends and neighbors, with the people who raise our food, and with the seasons that shape what comes from earth to table.

Stay tuned to next week’s Reporter to keep up to date on the Swampscott Farmers’ Market produce updates and activities.  The market is open rain or shine Sundays from 10:00 to 1:00 starting June 9th, at the Swampscott High School , 200 Essex Street .

{Music Spotlight} Opening Day June 9th

Don’t miss Arnie Rosen & Andrea Rupert play on Opening Day!

Sylvan Lewis Group is the brain-child of Arnie Rosen as a tribute to the muse that drives the music within all of us. A gifted guitarist, composer arranger, Arnie Rosen has performed classical, jazz and original music throughout New England. He has composed and performed for the American Repertory Theater, Cambridge, MA, and many many more.

Arnie has performed several times with world famous Tibetan musician, Penpa Tsering and has arranged and performed on guitar and bass for the choral ensemble, Windsong, formed and lead by Naomi Arenberg. Arnie has worked for many years as a music therapist, including 3 years at Sancta Maria Nursing Facility in Cambridge, MA.

CSA Available at the Market This Year!

CSA is now available at the Swampscott Farmers Market. What is a CSA? It is Community Supported Agriculture and a very popular way for consumers to buy local, seasonal food directly from a farmer. Here are the basics: a farmer offers a certain number of “shares” to the public. Typically the share consists of a box of vegetables, but other farm products may be included. Interested consumers purchase a share (aka a “membership” or a “subscription”) and in return receive a box (bag, basket) of seasonal produce each week throughout the farming season.

Several of our Swampscott Farmers Market farm vendors are now offering this great opportunity and to make it easy for our public you can pick up your CSA “box” right from the Swampscott Farmers Market each week on Sunday.

We currently have two farms offering CSA pickup at the Swampscott Farmers Market each Sunday and expect more to be available.

Grant Family Harvest share program which is a weekly subscription to everything they produce throughout the summer. Each week members will receive a share of the freshest vegetables, cut flowers, and eggs we are harvesting that week. Full shares feed a family of four (or two vegetarians) and includes a bunch of flowers and a full dozen of our eggs. Half shares feed a family of two or three including a bunch of flowers and a half dozen of eggs. Each week we will feature a product from a fellow local farm like fruit and other farm goodies.
